Grilled Salmon with Pesto
4 to 6 ounce salmon filet (Alaskan Wild Salmon
w/ skin on the bottom is best for grilling)
Pesto - Trader Joes "Pesto alla Genovese" Basil Pesto is
delicious or see Basil Pesto recipe below
Tomato slices
Enjoy with a delicious Tossed Green Salad (see below)
Basil Pesto
41/2 c. pine nuts
3 large cloves fresh garlic
2 tablespoons grated fresh parmesan cheese
1 tablespoon grated Romano cheese
1/2 c. extra virgin olive oil

Put
pine nuts and garlic in food processor and process until minced

Add basil and cheese; process until finely minced.

With processor on, slowly pour oil through food chute; process
until well blended.

Spoon into small container and store in refrigerator
Yield: 1/2 cup

Romaine lettuce
Purple cabbage - chopped
Red, green, and/or yellow bell peppers - chopped
Tomatoes - sliced
Avocado
Sprinkling of feta cheese
Sprinkling of Such & Such nut mix (Trader Joes)
Extra virgin olive oil
